Part 3 of 3 — the last installment about Friday’s adventures.

We arrived back at the children’s home at 8:00 p.m. and Elena insisted that we needed to eat dinner (despite the fact that we had already eaten twice in the last 5 hours!).  She invited us in to have blynai, a type of pancake.  Upon discovering that I had never made blynai (making American pancakes from Bisquik didn’t count), she decided this was the perfect time for me to learn.

Step 1: Who needs measuring cups

Put a lot of flour in a mixing bowl, add some salt, pour in water and milk, mix until the batter is the right consistency, add an egg.  We used a turkey egg.

Step 2: Everything’s better when fried

Pour small circles of batter into oil-filled pan.  Alternatively, pour a larger circle into pan, place cheese or sausage or varškė on one side and fold in half.   Cook until golden-brown.  Keep adding oil to the pan for each batch of blynai.

Step 3: Enjoy

Serve blynai with jam and sour cream. Yummy!
